Dave and Mitchell welcomed me to one of their roasting sessions atBig Bite Kitchensto chat about their humble beginnings, how they come up with recipes and the importance of community connections and cooperation.
The roaster was already fired up containing a batch of tomatillos when I arrived on a crisp summer morning. The scent filled the air with a tangy aroma.
While I have not yet found a way to duplicate the fabulous smells of the carmelizing garlic or tomatillo over the radio waves, this episode is rich with the sounds of industrial sized roasters and blenders whileDave and Michell share the story of their journey and their passion for fresh, local and of course tasty hot sauce.
